Lemon Rice:

Ingredients:

Sreamed rice – 1 cup

Lemon juice – 1/8 cup

Turmeric powder – ½ tsp

Salt to taste

Tempering:

Oil – 1 tsp

Mustard seeds – ½ tsp

Groundnuts – 1 tbsp

Cumin seeds/ jeera – ½ tsp

Whole dry red chillies – 2

Ginger – 1 small piece (chopped finely)

Garlic – 5 cloves (chopped)

Green chillies – 2 chopped (gives flavour)

Curry leaves – few

Garnish:

Cilantro / Coriander leaves

Mint leaves

Method:

  • In a bowl, mix lemon juice, turmeric powder, salt and green chillies chopped.

  • Keep the pan on low heat and start tempering with the ingredients given above.

  • Once raw flavour goes away from ginger and garlic, now add the lemon juice mixture to the pan on medium flame.

  • Allow to boil for 2 mintues, add steamed rice to the mixture and saute it for 3 more minutes.

  • Put off the flame and garnish with cilantro and mint leaves.

  • Serve hot and enjoy it with pappads, pickles, raitha etc….
